Spinach, Pomegranate and Chicken Salad

Treat yourself to a lavish summer treat - a healthy salad rich in calcium-packed spinach for strengthening your bones and lean, marinated chicken to pump up your protein intake with a healthy honey & balsamic vinegar dressing topped with ruby pomegranate pearls.


INGREDIENTS

For the chicken marinade:

2 tbsp lemon juice
1 tsp oregano
1 tsp garlic, crushed
Pinch of salt and pepper to taste

For the salad:


Spinach- a small bunch
One chicken breast
Handful of pomegranate pearls
One onion, thinly sliced

For the dressing:

1 tbsp balsamic vinegar
1 tsp honey
2 tbsp extra virgin olive oil
Salt and pepper, to taste


METHOD

1. Combine the marinade ingredients and generously coat the chicken on both sides & let it rest for 2 hours
2. Grill the chicken for about 5-10 minutes per side, turning once, until cooked through.
3. Combine the spinach, pomegranate pearls & onion in a big bowl.
4. Slice the grilled chicken and mix in with the salad.
5. In a separate bowl, combine the balsamic vinegar, honey, extra virgin olive oil and salt and pepper and drizzle over the salad
6. Serve and enjoy!
