Tender Cashew Nut Curry Recipe - A Summer Delicacy

What is the best part of sweltering hot summers? The abundance of seasonal fruits along with vegetables & the delicious preparations made across Indian kitchens. Moreover, delicious curries are made with summer special fruits like mangoes, watermelon, pineapples & many others. However, have you ever tried making a tender cashew nut curry that is considered a summer delicacy across India's coastal regions?


Made with a few pantry staples, try this delicious tender cashew nut curry that shall please the entire family. Apart from a curry, these culinary gems are also used to make a dry preparation known as tender cashew nuts stir fry. Known as "Ole Kaju" in Marathi, do try making this tender cashew nut curry recipe.

Ingredients:

1 cup Tender cashew nuts 
2 chopped onions
1 cup grated coconut
Red chili powder, garam masala to taste
1/2 tsp turmeric powder
Small ball of tamarind
1 tsp jaggery 
Oil 1 tbsp.
Salt as per taste

Method:

Firstly, soak tender cashews in hot water for couple of minutes to remove skin. In addition, be careful while peeling the skin off these nuts as they may cause an allergic reaction.

Next, take two chopped onions & sauté in little oil. Add grated coconut & roast till golden. Further, cool down & make a thick paste by grinding with little water.

Next, add a little oil in a kadhai. Add garam masala & red chili powder. Sauté the masalas on low flame so that they do not burn

Further, add peeled tender cashew nuts & mix. Add a little water & cook on medium flame for 7-8 minutes. Do take care to not over cook the nuts.

Add the ground paste along with hot water & mix. Cook for 8-10 minutes till well combined. 

Finally, add chopped coriander as garnish.

Tender Cashew Nut Curry With Coconut Gravy


Serve hot with rotis or steamed rice. As a matter of fact, one can also add fresh green peas to the curry, while cooking if desired.
