Apart from the much loved aloo tikki, many food joints have introduced tikkis made with other ingredients. Although, deep fried versions are often replaced with healthier alternatives, the sound of a tikki sizzling on a girdle is tempting. Crispy aloo tikki recipe:
Deep fried potato tikki that can be enjoyed on it's own or as chole tikki chaat.
Boil 4-5 medium sized potatoes. Once cooled, peel & grate them. Add 3 tbsp bread crumbs, ginger garlic paste, finely chopped green chilies, chopped coriander, chaat masala, cumin powder, little lemon juice, salt to taste & mix well. Divide the dough into round balls. Flatten each ball into a patty. Heat oil & fry on both sides till golden. Serve hot with green chutney.

Paneer tikki:
One of the best paneer recipes, these super soft paneer tikkis are great to beat hunger pangs.
Crumble two cups fresh paneer. Add chopped green chilies, chopped coriander, chaat masala, salt to taste & a pinch of sugar. Mix till well combined. Divide into equal portions. Make round balls & flatten them in your palms. Gently make a depression & fill each tikki with chopped raisins. Roll them again to seal the edges. Flatten into a tikki. Roll lightly in cornflour & shallow fry on both sides. Serve hot with ketchup
Sprouts tikki:
Boil 2 cups moong sprouts till tender. Drain & blend coarsely. Add one chopped onion, coriander leaves, chili powder, salt & enough gram flour/rice flour to bind it all well. Make round tikkis out of the mix. Heat oil in a pan& shallow fry on both sides. Serve hot with green chutney.
Rajma Tikki:
Nutritious tikkis made with kidney beans for that delicious protein dose. Besides, they are are great to enjoy as a snack or as a tempting burger
Soak one cup rajma overnight. Next morning drain water & pressure cook for 3-4 whistles. Cool & mash. Add bread crumbs, grated boiled potato, chopped onions, ginger-garlic paste, salt, red chili powder, garam masala powder & amchur powder to taste. Mix well. Roll & make into tikkis. Roll each tikkis in corn flour & shallow fry on both sides.
Oats Tikki:
A different way of eating oats that will be loved by all.
Rinse 1 1/2 cup poha (beaten rice) under water & drain. Sprinkle little water over one cup rolled oats in a colander. Now combine poha & oats with one boiled grated potato, one small grated carrot, chopped onion, chopped coriander, salt & lemon juice to taste, cumin powder, chopped chilies & little cornflour to bind well. Shape into flat tikkis, roll in a little cornflour & shallow fry on both sides.
Soyabean Tikki:
A great way to enjoy protein for vegetarians.
Soak one cup soyabean granules in hot water for 30 mins. Drain well & squeeze excess water. Heat 1 tbsp oil in a kadhai & add cumin seeds. Once the seeds crackle, add chopped onion & fry well. Now add soyabean granules, chopped coriander, dry masala powders like chaat masala, chili powder, turmeric powder & little garam masala. Cook well. Once cooled, add 4-5 boiled grated potatoes & bread crumbs to combine well. Roll into tikki shapes. Shallow fry on both sides. Serve hot.
