Eggplant With Sour Cream Recipe

Time Required: Approximately 30 minutes
Ingredients
- One big eggplant
- 2 tbsp oil
- 1 garlic clove finely minced
- 1 tsp. Himalayan pink salt + extra for seasoning
- 150 gm Sour Cream
Method:
- Wash the eggplant and cut the ends and the stem.
- Cut lengthwise and arrange on a plate. Sprinkle some Himalayan pink salt and keep aside for 15 minutes. Drain the water accumulated.
- Mix oil, minced garlic, little salt and brush the mixture on both sides of eggplant. Roast on a nonstick pan until lightly browned on both sides.
- Arrange on a plate and add sour cream
- Garnish with seasonal greens of choice.
- Serve immediately
