Must Try Delicious Boozy Popsicles
As a kid there was nothing more dreamy than an ice cold popsicle from the local candy man to cool down during summer days. To be honest I really never cared about the weather as long I could get my hands on my favorite flavor.
Well into my adulthood, I still dream of a mouth-watering popsicle (somethings never change) and with a little booze to the mix you’ve got yourself a happy grown-up. This festive season enjoy a flashback to your childhood with some delicious boozy popsicles. Your favorite cocktails can be transformed into a frozen delight in a matter of hours.
Just experiment with getting the ratios right for the concoction as you have to find the perfect balance between alcohol and freezable liquids to create a solid form.

Ingredients
- 2 1/2 cups water
- 1 cup sugar
- 20 mint leaves
- 1/4 cup rum
- 1/4 cup lime juice
Makes: 10 pops

Method:
- In a saucepan heat water and sugar and bring it to boil. Remove from heat and add stir in mint leaves. Cover the pan and let it steep until the mint syrup is cool. Alternatively you can also use Monin mojito mint syrup.
- In a bowl mix the mint syrup, lime juice and rum.
- Pour the concoction into popsicle molds.
- Add mint leaves into each one (if desired).
- Freeze for at least 4 hours.
