Ingredients:
- 500 g dried apricots
- 5-6 cups water
- 1 cup fresh orange juice
- lemon juice to taste
- White Sugar as per taste
Time Taken- One hour twenty minutes + prep time

Chop apricots roughly and combine with water in a large bowl, cover and stand overnight. Next day, combine the apricots and the soaked liquid with the orange and lemon juice in a large pan. Bring to rolling boil, then simmer on slow flame for 20 minutes. Pour in the sugar and stir until it dissolves, then bring the mixture back to the boil. Without stirring too often, boil gently for about an hour until the jam resembles gel like consistency. Pour into sterilized bottle/jars and seal when cold. Gift to loved ones or use during meal times!
