Vegetable noodles are an easy way to sneak precious nutrients and make the entire experience of eating vegetables fun, colorful and tasty for kids and are also great low carb alternatives for adults.

Now, this must have left you wondering.... how we do we make vegetable noodles? Well! it's quite easy using a kitchen tool called spiralizer or a julienne peeler easily available on popular shopping sites or in gourmet specialty stores.
While any round or semi-round vegetable can be made into noodles, some popular vegetable noodles can be made with:
- Zucchini noodles also called zoodles (wink wink...we are laughing too!!!)
- Sweet potato noodles also called swoodles
- Turnip noodles also called toodles
- Carrot noodles also called coodles
- Cucumber noodles
- Beet Root noodles
- Egg Plant noodles

Add vegetable noodles to soups to add flavour.
Here is an easy vegetable noodle recipe to get you started:
Raw Carrot Vegetable Noodle Salad
Ingredients:
- 3 large carrots cleaned and spiralized into noodles
- Finely chopped coriander
- Few roasted and crushed peanuts/cashew nuts (optional)
- One tablespoon lime juice
- Two tablespoon olive oil
- 1/2 tsp finely chopped fresh garlic
- Chili flakes as per taste
- Sugar and Salt to taste
- Mix all the ingredients for dressing together in a mixing bowl.
- Add the spiralized carrot noodles in a salad bowl and pour the dressing on top. Gently toss the salad.
- Transfer to a plate and garnished with roasted peanuts/cashew nuts and chopped coriander.
