Step By Step Recipe: Grated Sweet Potato Snack
Sweet potatoes, one of the best natural source of beta carotene have several health benefits. Ingredients:
3 Sweet Potatoes
1 teaspoon cumin seeds
Few curry leaves
2-3 green chilies slit
1 tablespoon crushed roasted peanut powder
1 tablespoon Ghee
lemon 1/2
Salt as per taste
Sugar a pinch
Chopped coriander & grated coconut for garnish
Directions:
1. Wash the sweet potatoes under running water and wipe them dry. Peel off the skin.
2. Grate the sweet potatoes. Cover them with water.
3. Heat Ghee in a pan/kadhai, add cumin seeds and the green chilies & curry leaves. Fry for a minute.
4. Squeeze out the water from the grated sweet potatoes and add to the pan/kadhai.
5. Mix well and cover with a lid. Allow it to cook for about 2-3 minutes.
6. Add crushed peanut powder, lemon juice, sugar and salt to taste. Stir to mix well, cover with lid & cook for 5-7 minutes.
7. Garnish with grated coconut & coriander leaves and serve hot.
